Amish Country Apple Butter
Bread
2 cups flour
1 cup brown sugar (or use Splenda Brown Sugar for a sugar free
alternative)
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups Amish country Apple Butter (can be substituted with Sugar
Free Apple Butter)
1/2 cup apple juice
1/4 cup butter, melted
1 egg, beaten
1 cup raisins (optional)
1/2 cup chopped walnuts (can be made
with or without walnuts)
Directions
1 Preheat Oven to 350 degrees
2 Combine flour, brown sugar, baking powder, baking soda and salt in
a large mixing bowl.
3 In a small bowl mix 3/4 cup apple butter, apple juice, butter and
egg together. Fold in the raisins and chopped nuts. Add the apple
butter mixture to the dry ingredients and blend together. Pour half
the mixture in a loaf pan that has been sprayed with cooking spray
or coated with grease. Gently spread the reserved 3/4 cup apple
butter over the batter. Pour the rest of the batter over the apple
butter mixture and spread evenly over the top to cover. Bake at 350
degrees for 55 to 65 minutes or until done.
4 To bake "my mistake loaf" just put all the apple butter in the wet
ingredients and blend into the dry ingredients. I cut up dried
pineapple pieces and added with the nuts instead of the raisins.
Pour the whole batter into the loaf pan and bake as above.
5 This makes a heavy moist bread that is delicious.
Amish Country
Apple Butter Cake
2 1/2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
dash ground cloves
1 tablespoon vinegar
1 cup milk
1/2 cup shortening
1 cup granulated sugar
4 eggs
1 cup Amish Country Apple Butter
walnut or pecan halves, optional
Directions:
Generously grease and flour bottoms of 3 8-inch layer cake pans.
Measure sifted flour, baking soda, salt, and spices into sifter.
Measure milk into a 2-cup measure; add vinegar.
In a mixing bowl, cream shortening and sugar until light and fluffy.
Beat in eggs, one at a time, beating well after each addition. Sift
in dry ingredients in about 4 additions, alternating with the soured
milk. Beat on low speed just until blended. Stir in the apple butter
and pour into pans. Bake in preheated 350° oven for 30 minutes, or
until center springs back when lightly touched with finger. Cool in
pans on racks for 5 minutes. Loosen sides with a knife; turn out
onto racks. Cool layers completely. Put layers together with cream
cheese frosting or a Butter Frosting , then frost sides and top.
Garnish with walnuts or pecans, if desired.

1 cup brown sugar (use Splenda Brown Sugar for a sugar free

1/2 cup quick oatmeal
1/2 cup Amish Country Apple Butter (can substitute with Sugar Free
Apple Butter)
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1/2 cup chopped nuts (optional)
Directions:
In a mixing bowl, cream butter and sugar. Beat in egg, oatmeal, and
apple butter. Combine flour, baking soda, baking powder and salt;
gradually add to creamed mixture along with milk. Beat until
blended. Stir in nuts. Chill.
Drop by teaspoonfuls onto lightly greased cookie sheets. Bake at 350
for 15 minutes. These freeze well.

Amish Friendship Bread
Ingredients:
1 pkg. active dry yeast
1/2 c. warm water
1 1/2 c. lukewarm water
2 c. sifted flour
1 tsp. salt
Directions:
Dissolve yeast in 1/2 cup warm water. Stir in 1
1/2 cups water, flour, salt, and sugar. Beat until smooth. Let stand
uncovered at room temperature three to five days stirring 2 or 3
times a day. Use a wooden spoon. Cover at night.
When the mixture is ready it should have a yeasty smell. Then pour
out one cup of this to use in the friendship mixture. The rest
should stand one day and then be refrigerated covered. Use within 10
days. Now, with the 1 cup you took out, add 1/2 cup water, 1/2 cup
flour and 1 teaspoon sugar.
Do not use metal spoon. Do not refrigerate. The day you receive the
started mixture - do nothing. Days 2, 3, and 4 stir with a wooden
spoon. Day five add 1 cup flour, 1 cup sugar and 1 cup milk. STIR.
Days 6, 7, 8, and 9 only stir the mixture. Day 10 add 1 cup flour, 1
cup sugar, one cup milk and stir. Pour 1 cup mixture into each of
the three separate containers and give to three friends.
The remaining mixture add 2/3 cup oil, 3 eggs, 2 cups flour, 1 cup
sugar, 1 teaspoon cinnamon, 1 1/2 teaspoon baking powder, 1/2
teaspoon baking soda and 1/2 teaspoon salt. Add fruits, nuts,
raisins or chopped apple. Before baking, pour into 2 well greased
and sugared loaf pans. Bake 45 to 50 minutes at 350 degrees. Cool 10
minutes.
